The following cookery courses are on offer;

"Forget dieting - just get into the way of eating healthily"
Losing weight and keeping it off doesn't have to be drudgery. Instead of "being on a diet", learn about, and how to cook healthy and appetising meals which will satisfy your hunger, without being full of calories. Adopt this philosophy for all that you cook, and you will be healthier, with more energy, look great, and be the envy of all your friends..!! Part two incorporates this with a cycle around the loch, breathing in all that fresh air....! Learn how to maximise your calorific intake against some gentle, yet effective exercise.

"Back to basics" Cookery Course
A lesson in how to cook like our predecessors, using inexpensive, seasonal produce, which will create good old fashioned, yet thoroughly modern classics, which will satisfy the whole family from midweek suppers through to glamorous dinner parties. Part two would be a demonstration in how to cook basic items which many people nowadays would automatically buy from the supermarket, such as pastry, stocks, soups, pastries and puddings.

Beginners Cookery Course aptly named "Cooking for the terrified"
If the thought of even boiling an egg fills you with fear, this is the course for you!
We explore first of all the basic cooking principles such as boiling, frying, grilling, poaching, roasting and braising, and incorporate these techniques into every day cooking to create a simple meal.
Part two uses these techniques to encourage a love of being in the kitchen, and adopting a whole new "hobby" which becomes a way of life.

"Men only"
If you have been fortunate enough to have been indulged all your days, without having had to set a foot over the kitchen threshold, this course is for you!
Maybe your circumstances have changed, and you now need to cook for yourself, or maybe you just realise what you have been missing out on all these years.... Regardless, meet with like minded individuals, without any pressure, and learn how to cook in a relaxed environment. Part two is for those men who already cook on a basic level, but who now, for whatever reason, wish to progress and impress....!!!

Create a super summer buffet for family and friends
A buffet is a simple way of entertaining a larger number of people than you would do normally. Learn about quantities, what to cook, and how to transform your food with some simple, yet effective garnishes into a stunning buffet, about which your guests will rave.

Easy mid week suppers for the family
Trying to juggle a job, with the knowledge that you have to go home and cook for the family needn’t be difficult. With a bit of forward planning, we can create delicious family meals in less than half an hour. Not only will these be free from all the additives and high salt content of processed meals, but they will work our cheaper too. Eating well on a budget is not difficult, if you let me show you how…!!!

The cookery courses at the Four Seasons, Perthshire, Scotland, will run for a day, with lunch being what you have prepared and cooked, giving you the chance to sample and discuss the textures, flavours and presentation.

All of the cookery courses' tuition will be given by Carlotta Fraser, well known locally for providing quality Outside Catering Services, Cookery Courses and Demonstrations.

Carlotta’s love of cooking started young, when she used to help her half Italian mother in the kitchen at home, while living in Kirkwall on the Orkney Islands. Having studied Home Economics to Higher Grade, embarking on a course in Catering and Hotelkeeping at Napier College in Edinburgh, she cut her teeth in a well known local restaurant.

Back in Edinburgh after opening a Delicatessen in Morningside, she moved on to Outside Catering, mainly for corporate clients initially, though quickly gained an excellent reputation for private dinner parties, weddings, and christenings. The catering side of the business which grew from strength to strength was eventually sold after fifteen successful years when Carlotta and her husband moved to Perthshire to run their own Hotel.

Carlotta will impart her knowledge and expertise in an informed, yet relaxed manner, giving participants the chance to share her love of food, as well as nutrition and well being, enhanced by what can only be described as one of the finest Lochside settings in the southern highlands.
